Classic Piña Colada: Your Tropical Escape
Originating from Puerto Rico, the Piña Colada is more than just a cocktail; it's a holiday in a glass. Its luscious blend of sweet pineapple, rich coconut, and smooth rum makes it an irresistible treat, perfect for sunny days or when you just need a taste of the tropics. Get your blender ready, because this creamy concoction is calling your name!
Ingredients
- 2 oz (60ml) White Rum (a good quality light rum works best)
- 1.5 oz (45ml) Cream of Coconut (not coconut milk, cream of coconut is sweeter and thicker)
- 4 oz (120ml) Pineapple Juice (freshly squeezed if possible)
- 1 cup Ice (more if you prefer a thicker consistency)
- Optional: 1/2 cup fresh or frozen pineapple chunks for extra flavour and thickness
- For Garnish: Pineapple wedge or leaf, Maraschino cherry
Instructions
- Chill Your Glass: Place a hurricane glass, highball glass, or a large wine glass in the freezer for a few minutes. A chilled glass helps keep your drink colder for longer.
- Combine Ingredients: In a blender, add the white rum, cream of coconut, pineapple juice, and the ice. If using, add the fresh or frozen pineapple chunks.
- Blend Until Smooth: Secure the lid and blend on high speed until the mixture is completely smooth and has a creamy, slushy consistency. There should be no ice chunks remaining.
- Pour and Garnish: Pour the blended Piña Colada into your chilled glass.
- Serve Immediately: Garnish with a fresh pineapple wedge or a pineapple leaf, and a bright red Maraschino cherry. Serve with a straw and enjoy your tropical delight!
Tips for the Perfect Piña Colada
- Cream of Coconut is Key: Don't substitute with coconut milk or regular coconut cream, as they lack the sweetness and thickness required for the authentic taste and texture. Brands like Coco Lopez or Real Coco are excellent choices.
- Frozen Pineapple: Using frozen pineapple chunks instead of fresh (or in addition to) can help achieve an even thicker, colder, and more intensely pineapple-flavoured drink without diluting it too much with ice.
- Adjust Sweetness: If you prefer a sweeter drink, add a small splash of simple syrup or a little extra cream of coconut. For less sweet, slightly reduce the cream of coconut.
- Chill Everything: The colder your ingredients are to start with, the less ice you'll need, resulting in a richer flavour.

- Virgin Piña Colada (Mocktail): Simply omit the rum for a delicious, family-friendly tropical treat.
- Spiced Piña Colada: Swap out the white rum for a spiced rum to add a warmer, more complex flavour profile.
- Lava Flow: For a stunning visual and flavour twist, make a Piña Colada and then slowly pour a mixture of strawberry puree (or grenadine) down the inside of the glass. It will sink to the bottom and swirl up, creating a 'lava' effect.
- Grilled Pineapple Piña Colada: For a smoky, caramelised twist, grill your pineapple chunks before blending. Allow them to cool before adding to the blender.
