The Kraken's Kiss: Dark Rum & Ginger Beer
A robust and spicy highball, the Dark Rum & Ginger Beer is a simple yet incredibly satisfying cocktail, perfect for any occasion.

Ingredients
- 2 oz (60ml) Dark Rum (e.g., Kraken Black Spiced Rum, Myers's Original Dark, Gosling's Black Seal)
- 4-5 oz (120-150ml) High-Quality Ginger Beer (e.g., Fever-Tree, Old Jamaica, Franklin & Sons)
- 0.5 oz (15ml) Fresh Lime Juice (optional, but highly recommended)
- Lime Wedge or Wheel, for garnish
- Plenty of Ice
Instructions
- Chill Your Glass: Start with a chilled highball glass. Fill it generously with ice cubes.
- Add Rum: Pour the dark rum directly over the ice.
- Add Lime (Optional): If using, squeeze in the fresh lime juice. This adds a crucial zesty balance to the drink.
- Top with Ginger Beer: Gently top up the glass with your chosen ginger beer. Pour slowly to preserve the carbonation.
- Garnish: Give it a gentle stir (just once or twice to combine, don't over-stir and lose fizz). Garnish with a fresh lime wedge or wheel.
- Serve: Serve immediately and enjoy the spicy, boozy refreshment!
Tips for Perfection
- Quality Ingredients Matter: Since there are so few ingredients, the quality of your rum and especially your ginger beer will make a huge difference. Opt for a spicy, robust ginger beer.
- Don't Skimp on Ice: A well-chilled drink is key. Plenty of ice will keep your drink cold without diluting it too quickly.
- Lime is Key: While optional, lime juice brightens the drink and cuts through the sweetness and spice, creating a more balanced flavour profile.
- Layering for Aesthetics: For a more visually appealing drink, you can pour the ginger beer first, then slowly float the rum on top. This creates a beautiful layered effect before the first sip.
Variations
- The Classic Dark 'n' Stormy: For the truly authentic experience (and if you have it!), use Gosling's Black Seal Rum and Gosling's Ginger Beer, always with a lime wedge. Note: The name "Dark 'n' Stormy" is a registered trademark of Gosling's.
- Spiced Up: Add a dash of Angostura Bitters for an extra layer of aromatic spice.
- Fruity Twist: Muddle a few raspberries or a slice of orange at the bottom of the glass before adding ice and other ingredients for a fruity kick.
- Smoky Edge: Experiment with a dark rum that has subtle smoky notes for a different dimension.
