Hedgerow Elixir: A Sophisticated Non-Alcoholic Delight

Step into a world of refined flavours with our 'Hedgerow Elixir', a mocktail designed for those moments when you crave complexity without the alcohol. This drink celebrates the natural bounty of the hedgerow, combining the tart sweetness of blackberries with the fragrant earthiness of rosemary in a unique homemade shrub. Perfect for a cosy evening by the fire or as an elegant welcome drink at a dinner party, it's a testament to how exciting non-alcoholic options can be.

Ingredients

For the Blackberry & Rosemary Shrub (makes approx. 300ml, enough for 6-8 drinks)

  • 200g (approx. 1.5 cups) fresh or frozen blackberries

  • 100g (approx. 1/2 cup) granulated sugar

  • 240ml (approx. 1 cup) apple cider vinegar

  • 2 sprigs fresh rosemary

For One Hedgerow Elixir

  • 45ml (1.5 oz) Blackberry & Rosemary Shrub

  • 120-150ml (4-5 oz) premium ginger ale or sparkling water, chilled

  • Garnish: Fresh blackberry and a small rosemary sprig

Instructions

Part 1: Prepare the Blackberry & Rosemary Shrub (minimum 24 hours in advance)

  1. Macerate Blackberries: In a non-reactive bowl, gently crush the blackberries with the granulated sugar. You can use a muddler or the back of a spoon. Cover and let sit at room temperature for 1-2 hours, or refrigerate overnight, allowing the sugar to draw out the blackberry juices.

  2. Infuse with Rosemary: Add the apple cider vinegar and the fresh rosemary sprigs to the blackberry mixture. Stir well to combine.

  3. Infuse & Chill: Cover the bowl and refrigerate for at least 24 hours, and up to 3-5 days, to allow the flavours to meld and deepen. Stir daily.

  4. Strain the Shrub: After the desired infusion time, strain the mixture through a fine-mesh sieve, pressing gently on the solids to extract all the liquid. Discard the solids and rosemary sprigs.

  5. Store: Pour the finished shrub into a clean, airtight bottle or jar. Store in the refrigerator for up to 2-3 weeks.

Part 2: Assemble the Hedgerow Elixir

  1. Chill Your Glass: Choose a beautiful coupe, rocks glass, or a highball glass. If possible, chill it beforehand.

  2. Add Shrub: Pour 45ml (1.5 oz) of the homemade Blackberry & Rosemary Shrub into the chilled glass.

  3. Top Up: Gently top the shrub with 120-150ml (4-5 oz) of chilled premium ginger ale or sparkling water. Pour slowly to preserve the carbonation.

  4. Garnish: Garnish with a fresh blackberry (perhaps skewered on a cocktail pick) and a small, fragrant rosemary sprig. You can gently clap the rosemary sprig between your hands before adding to release its aroma.

  5. Serve & Enjoy: Serve immediately and savour the sophisticated flavours.

Tips for Perfection

  • Quality Ingredients: Using fresh, ripe blackberries will yield the best flavour for your shrub. If using frozen, thaw them first.

  • Don't Rush the Shrub: The longer the shrub infuses (within reason), the deeper and more complex its flavour will be.

  • Premium Ginger Ale: A good quality ginger ale makes a noticeable difference. Look for brands with real ginger flavour and less artificial sweetness. For a less sweet option, sparkling water works wonderfully.

  • Ice Matters: Use large, clear ice cubes that melt slowly to avoid diluting your drink too quickly.

  • Rosemary Aroma: Gently 'wake up' the rosemary sprig by clapping it between your palms before garnishing to release its essential oils and enhance the drink's aroma.

Variations

  • Herbaceous Twist: Experiment with other herbs in your shrub, such as thyme or sage, for different aromatic profiles.

  • Citrus Brightness: Add a squeeze of fresh lemon or lime juice (around 15ml / 0.5 oz) to the finished mocktail for an extra layer of zing.
