Originating from the mid-20th century tiki culture, the Mai Tai is more than just a drink; it's an experience. Its name, reputedly coined by a Tahitian who exclaimed "Maita'i roa ae!" (meaning "out of this world! The best!") upon tasting it, perfectly encapsulates its allure. A sophisticated balance of aged rums, fresh lime, orange curaçao, and the distinctive flavour of orgeat syrup, this cocktail is a must-try for any rum enthusiast.

Ingredients

  • 1 oz (30ml) Aged White Rum (e.g., Rhum Agricole Blanc, or a light column-still rum)
  • 1 oz (30ml) Aged Dark Jamaican Rum (e.g., Appleton Estate Signature Blend, or another funky pot-still rum)
  • 0.75 oz (22.5ml) Freshly Squeezed Lime Juice
  • 0.5 oz (15ml) Orange Curaçao (or good quality Triple Sec)
  • 0.5 oz (15ml) Orgeat Syrup (almond syrup)
  • Garnish: Fresh mint sprig, lime wheel, and optionally a pineapple spear or edible orchid
  • Ice: Crushed ice for serving, cubed ice for shaking

Instructions

  1. Chill Your Glass: Grab a Double Old Fashioned or Rocks glass and set it aside.
  2. Combine Ingredients: Add the white rum, dark Jamaican rum, fresh lime juice, orange curaçao, and orgeat syrup into a cocktail shaker.
  3. Add Ice and Shake: Fill the shaker two-thirds full with cubed ice. Close the shaker tightly and shake vigorously for about 15-20 seconds, until the outside of the shaker is frosty cold.
  4. Prepare Your Glass: Fill your chilled Double Old Fashioned or Rocks glass generously with fresh crushed ice.
  5. Strain and Serve: Double strain the cocktail mixture from the shaker into your prepared glass over the crushed ice.
  6. Garnish: Slap a fresh mint sprig between your palms to release its aromatic oils and place it alongside a lime wheel on top of the crushed ice. For an extra tiki touch, add a pineapple spear or an edible orchid.
