Ingredients
- 2 oz (60ml) Malibu Coconut Rum
- 4-5 oz (120-150ml) Pineapple Juice (chilled is best)
- Ice
- Pineapple wedge or leaf, and/or Maraschino cherry for garnish (optional)
Instructions
- Prepare Your Glass: Fill a highball glass or a large tumbler generously with ice cubes.
- Add Malibu: Pour the Malibu Coconut Rum over the ice.
- Top with Pineapple Juice: Slowly top up the glass with chilled pineapple juice. Adjust the amount to your taste – more juice for a sweeter, milder drink, less for a stronger coconut flavour.
- Stir Gently: Give the drink a gentle stir with a bar spoon to combine the ingredients.
- Garnish (Optional): Adorn your drink with a fresh pineapple wedge or leaf on the rim, and/or drop in a Maraschino cherry for an extra touch of tropical flair.

- Chill Your Ingredients: For the most refreshing experience, ensure both your Malibu and especially your pineapple juice are well-chilled before mixing.
- Freshness Counts: While bottled pineapple juice is perfectly fine, using freshly squeezed pineapple juice will elevate this simple drink to another level.
- Adjust Sweetness: If you prefer a less sweet drink, you can slightly reduce the amount of pineapple juice or even add a small splash of soda water to lighten it up.
- Glassware: A highball glass is traditional, but any tall glass or even a hurricane glass will work beautifully.
Variations
- Zesty Twist: Add a small squeeze (about 1/4 oz) of fresh lime juice to introduce a bright, tart counterpoint to the sweetness.
