  • 125ml water
  • 200g mature cheddar cheese, grated
  • 100g Monterey Jack cheese, grated (or use all cheddar)
  • 1-2 fresh jalapeños, thinly sliced (remove seeds for less heat, if preferred)
  • For serving (optional but recommended):
  • 150g salsa
  • 100g sour cream
  • 100g guacamole
  • Fresh coriander, chopped
  • Lime wedges, for squeezing

Instructions

  1. Prepare the Beef: Heat the olive oil in a large frying pan or skillet over medium-high heat. Add the beef mince and cook, breaking it up with a spoon, until thoroughly browned. Drain off any excess fat.
  2. Add the finely chopped onion to the pan with the beef and cook for 3-5 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant.
  3. Stir in the taco seasoning mix and the water. Bring to a simmer and cook for 5-7 minutes, stirring occasionally, until the liquid has mostly evaporated and the beef is well coated and flavourful. Remove from heat.
  4. Assemble the Nachos: Preheat your oven to 180°C (160°C fan/Gas Mark 4). Spread half of the tortilla chips in a single layer on a large, oven-proof platter or baking tray.
  5. Spoon half of the seasoned beef over the chips, then sprinkle with half of the grated cheddar and Monterey Jack cheeses.
  6. Repeat with the remaining tortilla chips, beef, and cheese, creating a second layer.
  7. Scatter the sliced jalapeños evenly over the top.
