Hearty Chilli Dogs

Ingredients
For the Chilli:
- 1 tablespoon olive oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 500g lean beef mince
- 1 tablespoon chilli powder (adjust to your preferred heat)
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon cayenne pepper (optional, for extra heat)
- 400g can chopped tomatoes
- 400g can red kidney beans, drained and rinsed
- 2 tablespoons tomato paste
- 250ml beef stock
- Salt and freshly ground black pepper to taste
For Assembly:
- 4 good quality hot dogs
- 4 hot dog buns
- 100g mature cheddar cheese, grated
- Optional toppings: finely chopped white onion, sliced jalapeños, mustard, ketchup
Instructions
Prepare the Chilli:
Heat the olive oil in a large saucepan or Dutch oven over medium heat. Add the finely chopped onion and cook for 5-7 minutes until softened and translucent. Add the minced garlic and cook for another minute until fragrant.- Add the lean beef mince to the pan. Break it up with a spoon and cook until it's browned all over. Drain any excess fat from the pan.
- Stir in the chilli powder, ground cumin, smoked paprika, and cayenne pepper (if using). Cook for 1-2 minutes, stirring constantly, to toast the spices and release their aromas.
- Pour in the chopped tomatoes, drained and rinsed kidney beans, tomato paste, and beef stock. Stir everything together until well combined.
- Bring the chilli to a simmer, then reduce the heat to low, cover the pan, and let it cook for at least 30 minutes (or up to an hour for deeper flavour), stirring occasionally, until the chilli has thickened and the flavours have melded beautifully. Season with salt and black pepper to taste.
Cook the Hot Dogs:
While the chilli is simmering, cook your hot dogs according to their package instructions. This could be grilling, boiling, pan-frying, or oven-baking.- Lightly toast the hot dog buns, if desired, to give them a bit more structure and warmth.
Assemble Your Chilli Dogs:
Place one cooked hot dog into each toasted bun.- Spoon a generous amount of the hot, hearty chilli over the hot dog.
- Top with a sprinkle of grated mature cheddar cheese.
- Add any other desired toppings such as finely chopped white onion, sliced jalapeños, a squiggle of mustard, or a dollop of ketchup.
