Sizzling Chicken Fajitas
A vibrant and flavourful dish of marinated chicken and crisp vegetables, served sizzling hot, perfect for pairing with a refreshing beer or a zesty tequila cocktail.

Ingredients
For the Chicken & Marinade:
- 500g (approx. 2) boneless, skinless chicken breasts, cut into thin strips
- 2 tbsp olive oil
- 2 tbsp lime juice (from about 1 large lime)
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp dried oregano
- ¼ tsp cayenne pepper (optional, for extra heat)
- ½ tsp salt
- ¼ tsp black pepper
For the Vegetables:
- 1 large red onion, thinly sliced
- 1 red bell pepper, deseeded and thinly sliced
- 1 yellow bell pepper, deseeded and thinly sliced
- 1 tbsp olive oil
To Serve:
- 8-12 flour tortillas (6-8 inch / 15-20 cm diameter)
- Fresh lime wedges
- Fresh coriander, chopped (optional)
Optional Toppings:
- Salsa
- Guacamole
- Sour cream or Greek yogurt
- Grated cheese
Instructions
- Marinate the Chicken: In a medium bowl, combine the chicken strips with 2 tbsp olive oil, lime juice, chili powder, cumin, smoked paprika, garlic powder, onion powder, oregano, cayenne pepper (if using), salt, and black pepper. Mix well to ensure the chicken is evenly coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for best flavour.
- Prepare the Vegetables: While the chicken marinates, prepare your onion and bell peppers by thinly slicing them.
- Cook the Chicken: Heat 1 tbsp olive oil in a large skillet or cast-iron pan over medium-high heat. Once hot, add the marinated chicken strips in a single layer (you may need to do this in two batches to avoid overcrowding, which steams the chicken instead of searing it). Cook for 4-6 minutes, stirring occasionally, until the chicken is cooked through and lightly browned. Remove the chicken from the pan and set aside.
- Cook the Vegetables: Add the remaining 1 tbsp olive oil to the same pan (no need to clean it – the chicken flavour adds to the veggies!). Add the sliced red onion and bell peppers. Sauté for 5-7 minutes, stirring frequently, until the vegetables are tender-crisp and slightly charred.
- Combine and Sizzle: Return the cooked chicken to the pan with the vegetables. Toss everything together to combine and heat through for 1-2 minutes.
- Warm the Tortillas: While the chicken and vegetables are sizzling, warm your tortillas. You can do this by wrapping them in foil and heating in an oven at 180°C (350°F) for 10-15 minutes, or by heating them briefly in a dry skillet over medium heat for 20-30 seconds per side until soft and pliable.
- Serve: Transfer the sizzling chicken and vegetable mixture to a serving platter or a hot cast-iron plate. Serve immediately with warm flour tortillas, fresh lime wedges, chopped coriander, and your choice of optional toppings like salsa, guacamole, sour cream, or grated cheese.
